In Kingdom Hearts 3, Sora collects whatever he can find around the worlds he visits. From apples to shards of magic, there are literally hundreds of items to collect. When these smaller items are brought to the Workshop inside the Moogle Shot, you can Synthesize them and transform them into weapons, armor or rings. Getting better gear is a must for some of the higher difficulty levels or end game boss fights, which makes Synthesizing a crucial aspect of gameplay.
There's also the Keyblade Forge that allows you to spend specific items to make your weapons stronger. Each blade has 10 levels that increase the damage of your basic attacks and spells and sometimes grant unique elemental attacks. You'll need Fluorite (which can be found on the map or bought in the store) to level them up the first few times, but you'll need Damascus and eventually Adomantite to reach their full power.
Moogles can also give you items for bringing them certain pictures or by completing quests. Collectors' Goal has you Synthesizing items and collecting shards or items, an extra bonus for just the playing the game efficiently. Completing these missions will you earn you Prize Postcards, which can be redeemed for items at the mailbox in Twilight Town, and the more picture quests you complete, the more items you can synthesize.
Photo Missions are exactly what they sound like. Moogles are lacking "inspiration" and it's up to you to take pictures around the worlds. Check this tab often to find out what you should be looking for. No spoilers here, but you'll need to search far and wide to find everything on their list.
